Citrus Watercress Salad with White Balsamic Vinaigrette
Ingredients
2 cups watercress, washed and trimmed
1 cup radicchio, thinly sliced
1 small fennel bulb, thinly sliced
1 blood orange, peeled and thinly sliced
2 mandarins, peeled and segmented
1 cara cara orange, peeled and thinly sliced
1 navel orange, peeled and thinly sliced
2 tablespoons fresh dill sprigs
Flakey salt, to taste
For the White Balsamic Vinaigrette:
3 tablespoons white balsamic vinegar
1 teaspoon honey
1/4 cup extra-virgin olive oil
Kosher salt and freshly cracked black pepper, to taste
Instructions
Step 1:
Prepare the vinaigrette: In a small bowl, whisk together the white balsamic vinegar, honey, Kosher salt, and freshly cracked black pepper. Gradually whisk in the olive oil until well combined and emulsified. Taste and adjust seasonings as needed.
Step 2:
In a large salad bowl, combine the watercress, radicchio, and fennel with the white balsamic vinaigrette. Toss well to coat the greens evenly. Add the citrus and give it a quick toss to gently combine.
Step 3:
Garnish the salad with fresh dill sprigs and a generous pinch of flakey salt, to taste.
